We’ve followed these documented connector steps:

and have established a connection, but in the preview do not see any of the Salesforce data tables (SObjects) that contain the data we want to access.

Found the problem I’d got the “Selected OATH Scopes” wrong at the Salesforce side. See here for the detail:
