Column groupings can not currently be hidden. One potential workaround would be to create two of the same pivot tables (one with column groupings and one without) and a button to swap between them.
Row groupings can be hidden by enabling them in the pivot table config
and then clicking on a button in the bottom left corner to move groupings between shown, expandable, and hidden.
